fig and mascarpone tartlets

Ingredients :

1 x Empire Pastry Sweet Vanilla Shortcrust Sheet, defrosted

3 ripe figs

1/3 cup thin cream

3/4 cup mascarpone

2tbsp caster sugar

1tbsp vanilla paste

1tbsp lemon juice

Honey

You will need 9 small tartlet tins for this recipe.

method:

Step 1: Pre heat oven to 170c. Cut slightly larger rounds than your tartlet tins from the pastry and carefully push into the tins. Place onto a baking sheet and bake until golden, 12-15 minutes.

Step 2: Whisk the mascarpone, cream, vanilla paste and caster sugar until soft peaks, stir in the lemon juice. Cut the figs into halves if small or quarters if larger.

Step 3: Once the tart shells are cold, pipe or spoon in the mascarpone mixture and top with fig.

Step 4: When ready to serve, drizzle with a little honey.
