Apple, blueberry and walnut pie

Ingredients :

1 x sheet Empire Puff Pastry, defrosted.

4 Granny Smith apples, peeled, cored and finely chopped.

2 tsp lime juice

80g caster sugar

1 tsp vanilla extract

1 tsp ground cinnamon

2 tsp ground cardamom

30g unsalted butter

1 cups frozen blueberries

1 cup chopped walnuts

2 tsp plain flour

egg wash

1 tbsp brown sugar

method:

Step 1: Pre heat oven to 200c. Line a large baking tray with baking paper.

Step 2: In a saucepan add the apples, caster sugar, vanilla, cinnamon, cardamon and lime juice and over medium heat, cook until apple softens. Add butter then cool.

Step 3: Once cool, add blueberries, walnuts and stir through the flour.

Step 4: Unroll pastry and pile mixture onto one half, folding over other half and crimping to seal.

Step 5: Brush the surface with the egg wash, cut 4 slits in the top then sprinkle with the brown sugar.

Step 6: Bake for 15 minutes, then turn the oven down to 180c for a further 10 minutes until golden.

This can be served warm with cream and ice-cream or at room temperature.
